  沧海桑田,对于临海而居的人们,大海正是他们的田园。
  Advancing with the passage of time, sea is the farmland for the people living nearby.
  泉州围头湾内的安海镇,自古是中国东南的重要港口和避风良港。老陈家祖祖辈辈生活在这片海湾,而今他经营着一家餐厅,主营安海土笋冻,一种能吃的虫珀。
  Anhai town along Weitou Bay of Quanzhou is an important port and safe haven in southeast of China. Mr.Chen’s family have been living near the beach for generations and currently he is running a restaurant nearby, and the main food he serves is Tusun Dong , a kind of jelly looking like amber and made out of edible sea worms.
  每天清晨,到海田里寻觅土笋,老陈开始了把一条虫酿成一块虫珀的倾心劳作。
  Every day, Mr.Chen gets his hard work started in the morning with searching for worms along the beach and turns them into worm jelly looking like amber. 
  山里有冬虫,海里有星虫,闽南人称为土笋的食材,是一种学名可口革囊星虫的软体动物,形似蚯蚓,藏匿在浅海滩涂的淤泥里,踪迹难觅。但它们的美味指引着人们费尽心思去寻找。
  There are cordyceps in the mountain and sipunculids in the sea while the raw material for Tusun dong called by the people living in south of Fujian province is known as phascolosoma esculenta looking like earthworm. It’s living under the mud along the beach and not easy to be found. However, its good taste always seduces people to get out of their way to find this worm.
  安海的土笋有很多种吃法,它可以煮成土笋汤,然后可以下去炒,加韭菜蒜头加肉下去炒,炒土笋,然后最最特别的是做我们家乡几百年流传的土笋冻。
  This worm can be made to be delicious food in different ways: either to make it as worm soup or fry it with leek and meat but making it into a jelly form would be the most special way which has been passed down for generations by local people.

  最好吃的食材需要最用心的对待。对老陈而言,以最质朴的传统手工做法对待最地道的风味,是他对美食的尊重。
  One needs to very serious about the raw material for gourmet food. And for Mr.Chen, he always makes the most authentic local food in a genuine and traditional way and this is his respect for the gourmet food.
  我们家乡安海的土笋冻,要选用新鲜的土笋,挖回来要多次地用水冲洗,冲洗土笋身上的那个污泥,然后要把头尾剪掉,剪掉后,用那个石轮在石板上碾压,碾压完后再泡清水冲洗,冲洗后就直接可以用柴火,大锅,加入古井水。捞起土笋,把汤汁跟土笋放在小碗里面,做好了后放着冷却,冷却之后,就形成一碗鲜美的土笋冻。
  This worm jelly made in Anhai needs fresh sea worms which will be washed multiple times to be completely free of dirt. Two ends of worms will be cut off, leaving the rest to be grinded on mill stone. After that, they need to be washed again with clean water before being cooked in the water from ancient well in a big pot on firewood. When they are well cooked, they are ladled into small bowls for cooling down to naturally congeal to the tasty jelly
  清水冲洗wash by water
  剪掉头尾cut off two ends
  石轮碾压 grind them in a stone mortar
  再次冲洗wash again
  柴火煮沸boil them in a pot
  添加汤汁add soup
  冷却凝结 keep them being cool to naturally congeal
  凝固后的土笋冻晶莹剔透,配以酱料,味美甘鲜,清凉润滑,令人回味无穷。在简单的食物里,投入时光和感情,酿造出独一无二的美味。
  The congealed worms jelly is shiny and translucent and will be more delicious if dipped in sauce. This simple sea warms are made into such delicate gourmet by local people’s heart, and  it’s one of a kind.  
  家乡的这碗土笋冻相当好吃,很多华侨回来, 无论走多远都要来找到小店,来品尝我们这一碗鲜美的土笋冻。
  Our hometown’s sea worms jelly are very yummy,many overseas Chinese come back.
  so no matter how far our restaurant is from them, they will come all the way here just to taste it
  而这美味,深藏在闽南人的味蕾上,也深深烙印在他们心上。
  This tasty food will never be forgotten by local people in south of Fujian province.
